Ingredients

  • ½ cup creamy peanut butter
  • ¾ cup coconut milk full-fat
  • 2 tbsp soy sauce
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 2 garlic cloves
  • 1 tbsp ginger chopped
  • 1 tsp chili garlic sauce
  • carrot/cucumber/bell pepper sticks

  • small bowl
  • platter
  • knife
  • cutting board

Method

  1. Layer all sauce ingredients in the blender jar — peanut butter, coconut milk, soy, lime, honey, garlic, ginger, chili sauce.
  2. Blend until it runs in a smooth vortex, pale tan and glossy; give it another 20 seconds if ginger bits remain.
  3. Spoon test: thick, perfectly smooth ribbon; a thin even coat clings to the back of the spoon.
  4. Pour into a small bowl in a thick glossy stream.
  5. Swirl a thin ribbon of coconut milk across the surface; sprinkle crushed peanuts and chili flakes; fan the vegetable sticks around the bowl. Serve at room temperature.
